I'm not afraid of public speaking or doing impromptu teaching for Abby's class. I am pretty good at dealing with new people, new places, new situations (though I do tend to lose sleep). But what seriously just paralyzes me is someone asking me to bring the snack for a class, school, or meeting.
I have no idea why.
Well, I have some idea why. I am, myself, such an odd eater that I:
a) don't have a long list of things that pop into mind when you say 'snack'
b) don't know if what I choose makes sense together
I'll do anything else... just don't make me bring snack.

Yah, how bout that good ole staple: Trail Mix. Wanna know somethin'? I hate trail mix. But I guarantee you...at some point during this school life, Trail Mix will rear its ugly head. Don't be that mom.
Sugar. That's the key. Kids love sugar. Abby's mommy brings sugar. Sugar makes us happy. We are happy because of Abby. Abby is popular. Abby learns that being popular and accepted by the "in-crowd" is the foundation of her self-worth. Self-worth takes a hit one day when Timmy's mommy brings in sugar's arch nemesis: the puppy. At the tender age of 3, Abby learns that love and loyalty are as solid as the corn syrup they were built on.
Go with the Trail Mix.
LOL - but trail mix has peanuts/nuts usually and kids today don't do peanuts til they are in high school... just in case they are deathly allergic to them as in Shannon's case.
And the school is very anti-sugar. If I brought in little donnettes or something I'd probably be fined.
I'm not sure if you're looking for any practical suggestions, but that's how I operate :), so here are some ideas:
Abby's class - sliced apples and cheese slices; string cheese; mini pretzels; mini rice cakes (all kinds of good flavors and they're low in fat and calories); veggies with a lowfat dip - Rachel likes broccoli, baby carrots, cucumbers, etc.; animal crackers; fruit salad.
Some of those ideas work for other types of meetings, too, like a veggie tray with dip. You could do cheese and crackers. Slices of apples and a sweet dip (8 oz. cream cheese, 1 c. brown sugar, 1 T. vanilla) is really good if you're going somewhere where they don't abhor sugar.
Coffee cake is a good snack food, too, that doesn't have to be high in sugar (despite having "cake" in the name!).
At any rate, you probably weren't looking for actual snack ideas, and now I'm feeling silly ;)

Pretzels is inspired. I have done apple slices and cheese. Today I did Chicken nuggets.
Part of the fear is that for Abby's school - a) they ask us to steer away from cheese because we always do cheese (well duh it's a snack with protein!) and b) if you bring something really good you have to bring three times as much because it's so sad when the kids don't get enough.
Practical people make the world go round!
I've found a salt lick to be both unconventional and wildly popular at most social gatherings.
